chocolate is never simply chocolate

I’m sending you a story from my kitchen today, and it begins with what looks like a simple instruction:

100 grams of chocolate chips

It sounds very exact—and it is. But those same 100 grams can make two versions of the same pastry taste completely different, depending on the chocolate you choose.

I think I knew this all along, even before pastry school. But it was there that the thought truly stayed with me.
